Does a splatter screen work with high-heat stir-fry?
I do a lot of Asian-style stir-fries on high heat with plenty of oil. Will a splatter screen for frying pan handle that temperature and constant tossing/moving without issues? Or does it just fly off?

It works surprisingly well for stir-fry if you get a sturdy one. The screen stays put because of its weight and wide rim – doesn’t slide around even when you’re tossing ingredients. High heat isn’t a problem for good stainless mesh; it won’t warp or discolor like cheaper versions. I use mine almost every time I do a big stir-fry and it catches tons of oil spray while still letting steam escape so the veggies stay crisp. Just lift it briefly when adding ingredients if needed.
